The Bomb Bruschetta

I love bruschetta. I found an easy recipe somewhere a long time ago and I have learned to eyeball it.  I have to be real, I dont measure this. It is all about proportion. The parmesan, salt, pepper, and basil are for flavor. The olive oil and vinegar hold all the flavors together and keep it nice and moist, add these ingredients sparingly. Add as much or as little onion as you like and you have a healthy and very flavorful snack.

Take a shot at this and let me know what you think:

1 tbsp Olive Oil (EVOO)
1 tbsp White vinegar
1 tbsp Dried or Fresh basil
Salt to taste
Pepper to taste
2 tbsp Parmesan cheese
1 cup chopped fresh tomato  (stay away from canned stuff on this one)
3/4 cup chopped Onion (white or red)

Mix it all. If it looks too dry, add more vinegar or EVOO. Enjoy on a toasted pita, baguette, or crostini.

Another tip:  Instead of mayo, pickles or celery in your tuna salad, add this. It is lower in fat and a nice variation on tuna salad.

Take that tuna idea a step further:  Make a melt. Grab some provolone and any kind of bread and give it a grill til golden brown. Yummy Italian Tuna melt :)


Plating ideas:  Cut or tear the bread that will be served with the bruschetta. Fill a small bowl with the bruschetta and put it on a plate, include a spoon. Surround the plate with bread..... super easy effort goes a long way.

If you have the time, feel free to individually top crostini with bruschetta and use a beautiful serving plate.
